Mushroom buckwheat
Toasty grains, golden mushrooms and fresh parsley. A comforting dinner made with everyday ingredients.

Let's make it
Rinse the buckwheat. Add to a saucepan with the water and a pinch of salt. Bring to a boil, cover and simmer gently for 15–20 minutes until the water is absorbed.
Meanwhile, slice the mushrooms and dice the onion.
Heat half the oil in a frying pan. Soften the onion for 5 minutes, then transfer it to a plate.
Add the remaining oil and mushrooms. Cook over medium-high heat for 7–10 minutes until the liquid evaporates and the mushrooms turn golden.
Return the onion to the pan and fold in the buckwheat. Season and finish with chopped parsley.
A small kitchen tip
Give the mushrooms room: a single layer, or two batches, helps them brown instead of steaming.
