Tomato & basil pasta
Ripe tomatoes, fragrant basil and a little patience. A sauce worth saving a piece of bread for.

Let's make it
Dice the tomatoes and thinly slice the garlic. Pick the basil leaves from their stems.
Warm the oil in a wide pan. Cook the garlic over medium heat for 30–60 seconds, without letting it brown.
Add the tomatoes and a pinch of salt. Simmer for 12–15 minutes, stirring occasionally and crushing the tomatoes with a spoon.
Cook the pasta in salted water according to the packet. Save a small cup of cooking water before draining.
Toss the pasta in the sauce with a few spoonfuls of the reserved water. Warm for a minute, then add basil, pepper and grated cheese.
A small kitchen tip
Starchy pasta water helps the sauce cling to the noodles. Add it a little at a time: aim for silky, not watery.
